To begin making carrot vadi, wash, peel, and grate the carrots in a mixing bowl.
Add besan, wheat flour, turmeric powder, cumin powder, curd, oil, sugar, and salt to the grated carrots. mix well to form a firm and smooth dough. add water as needed to make a soft dough.
Shape the dough into cylindrical rolls, about 6 inches in length and 1 inch in thickness. ensure the rolls are tightly packed to prevent splitting during cooking.
In a saucepan, bring water to a boil and gently drop the rolls into the boiling water. boil for about 15-20 minutes on high heat to cook the rolls.
Once cooked, remove the rolls from the water and let them cool completely. once cooled, cut the rolls into even-sized slices or bite-sized pieces.
