To prepare the pumpkin delightful idli, start by grinding the brown rice with a little water in a mixer until it becomes a coarse mixture. it should have a slightly grainy texture but not be completely smooth.
In a pressure cooker, cook the chopped green pumpkin until it becomes soft and mushy. this will take about 4 whistles. after cooking, mash the pumpkin into a smooth paste.
Transfer the mashed pumpkin into the bowl containing the ground rice mixture. add the fresh coconut kernel and a pinch of cardamom powder to the mixture. mix all the ingredients until well combined.
Allow the mixture to rest for about 10-15 minutes.
While the mixture is resting, prepare an idli steamer by adding water and bringing it to medium heat. grease the idli molds with a small amount of ghee (clarified butter).
