To prepare the coconut chana dal chutney, heat oil in a pan over medium heat.
Add the chana dal, a few curry leaves, and red chillies to the pan. saute for a couple of minutes until the dal turns golden brown.
Add grated coconut to the pan and stir for 1 minute until the coconut is lightly toasted.
Remove the pan from heat and transfer the contents to a mixer jar.
Grind the mixture to a smooth paste, adding only as much water as needed to facilitate grinding. the consistency should not be too runny.
