To prepare mango and fennel infused urad dal pooris, start by dry roasting the red chili peppers, coriander seeds, and cumin seeds in a pan until they become fragrant. make sure not to overcook them.
Allow the roasted spices to cool, and then grind them into a coarse powder. set this spice mixture aside for later use.
Drain any excess water from the soaked split black lentils (urad dal) and transfer them to a blender.
Blend the dal into a coarse paste without adding any water.
Transfer the ground dal to a large bowl.
