To prepare spicy urad dal, start by rinsing the urad dal split and soaking it in water for about 30 minutes.
After soaking, drain the water from the dal.
In a pressure cooker, add the soaked urad dal along with enough water to cover it. cook the dal until it becomes soft and tender. this typically takes about 3-4 whistles.
While the dal is cooking, finely chop the ripe tomatoes.
In a separate pan, heat ghee and add mustard seeds, cumin seeds, and panch phoran. allow them to splutter.
