To prepare the balsamic glazed herb-roasted carrots, start by preheating your oven to 200 degrees celsius.
Wash and peel the carrots. if they are large, you can cut them into evenly sized pieces for even roasting.
In a mixing bowl, combine the carrot pieces with olive oil, balsamic vinegar, salt, and black pepper. toss them together until the carrots are well coated with the mixture.
Take a baking tray and spread the carrots in a single layer. place the fresh thyme and rosemary sprigs on top of the carrots.
Roast the carrots in the preheated oven for about 25-30 minutes or until they are tender and have developed a slight caramelized glaze.
