To prepare tandoori chicken momos, start by making the dough. in a mixing bowl, add wheat flour and slowly add water to knead into a medium-stiff dough. the dough should be smooth, non-sticky, and firm. cover the dough and let it rest for 2 hours.
For the chicken momo filling, in another mixing bowl, combine chicken cubes, fresh cream, tandoori masala seasoning, garam masala, cumin powder, red chilli powder, chaat masala, salt, and lemon juice. mix everything well and marinate for 15 minutes.
Heat a grill pan over medium-high flame and cook the marinated chicken pieces for about 3-4 minutes on each side until fully cooked. once done, transfer the chicken momo filling into a bowl and set it aside.
Now, take the momo dough and divide it into lemon-sized balls. roll out each ball on a surface to make thin and delicate outer layers for the momos.
Place about 1 tablespoon of the prepared chicken momo filling on each flattened dough leaf. fold the edges to form semi-circles and pleat the edges to give the momos a nice characteristic shape.
