Hull the strawberries (remove the stems) and place them in a food processor. process until smooth to make the strawberry puree.
In a saucepan, combine the strawberry puree, two tablespoons of caster sugar, and simmer over low heat for about 10-12 minutes, or until the puree reduces by half and thickens. set aside to cool completely.
Place the oat biscuits in a food processor and pulse until they resemble crumbs. alternatively, place the biscuits in a ziplock bag and crush them with a rolling pin. mix the biscuit crumbs with melted butter and set aside.
In a large bowl, beat the cream cheese and 1/2 cup of caster sugar until soft and fluffy. add the whipped cream and beat for two to three minutes until the mixture slightly increases in volume and resembles thick frosting. pour in the cooled strawberry puree and use a spatula to gently combine everything. the mixture may be streaky and slightly runny, but that's okay. transfer the mixture to a piping bag for easy assembly.
To assemble the no-bake strawberry oat cheesecake jars, add two tablespoons of the biscuit crumb mixture to a glass or jar. pipe the cheesecake mixture until it fills about 1/4th of the jar. repeat with the remaining jars until all the mixture is used. refrigerate the jars overnight to set.
