In a heavy-bottomed pan, heat oil over medium flame. add mustard seeds and allow them to splutter.
Add cumin seeds, urad dal, chana dal, curry leaves, and green chillies. saute for a few seconds.
Add chopped shallots and a little salt. saute until the shallots turn translucent.
Add the vegetables - carrots, corn, peas, and cook on medium flame until they are half cooked.
Add the chopped tomatoes, mix well, and saute for a couple of minutes.
