To create the quinoa and white peas goan curry, start by soaking the quinoa in water for about 30 minutes. then, rinse it thoroughly and set it aside.
In a pressure cooker, combine the soaked white peas, chopped onion, and 1 cup of water. pressure cook for about 4-5 whistles or until the peas are cooked. allow the pressure to release naturally.
In a dry pan, lightly roast the coriander seeds, dried red chilies, cloves, cinnamon, and cardamom until a fragrant aroma arises. let the spices cool down.
Using a mixer or blender, combine the grated coconut, tamarind, and the dry-roasted spice mixture. add 1/2 to 3/4 cup of water and blend until you have a smooth paste.
Heat a pan or kadai, and add ghee to it.
