To create the nutty date and peanut energy bars, gather all the ingredients and prepare a food processor for blending.
In the food processor, combine the dark brown dates, peanut butter, almond butter, rolled oats, vanilla extract, almonds, hazelnuts, cashews, cocoa powder, and a pinch of sea salt.
Pulse the ingredients until a well-combined mixture forms. you want the nuts to be chopped into small pieces while still maintaining texture.
Once the mixture has reached the desired consistency, transfer it onto a tray and evenly spread it out. press the mixture down firmly to compact it.
Place the tray in the refrigerator and let the energy bar mixture set for about 2 hours.
