To make nutty jaggery squares, start by melting ghee in a frying pan over medium heat.
Add the whole wheat flour, cardamom powder, and dry ginger powder to the ghee, and stir constantly until the mixture turns golden brown and releases a roasted aroma. this process should take about 10 minutes.
Be sure not to use high heat, as it may burn the wheat flour too quickly.
Once the wheat flour has attained a golden brown color, turn off the heat and quickly add the jaggery to the mixture. stir well to allow the jaggery to melt quickly into the warm wheat flour.
Adding jaggery can be a bit tricky as the mixture can become brittle and sticky. exercise caution and turn off the heat just before adding the jaggery.
