In a bowl, take gram flour. add yogurt and approximately one cup of warm water. mix well to avoid lumps. add a pinch of salt and mix again.
Set the mixture aside to ferment for three to four hours. once the gram flour mixture has fermented, add turmeric powder and green chilli-ginger paste. mix well. preheat a steamer and grease a thali (a flat, round dish).
In a small bowl, combine lemon juice, baking soda, and one teaspoon of oil. mix them together, and then add this mixture to the batter. whisk briskly to incorporate. pour the batter into the greased thali and place it in the steamer.
Cover the steamer with a lid and steam the batter for ten minutes. after it has cooled slightly, cut the steamed batter into squares and transfer them to a serving bowl or plate.
Heat the remaining oil in a small pan. add mustard seeds. once the seeds begin to crackle, remove the pan from heat and pour the tempered mustard seeds over the dhoklas (gram flour squares).
