To make the multigrain pizza dough, start by mixing honey into 3/4 cup of warm water. set aside.
In a stand mixer or a large bowl, combine whole wheat flour, ragi, oat flour, sesame seeds, instant dry yeast, and salt.
Gradually add the warm water and honey mixture, and knead until the dough forms.
Coat the dough with a tablespoon of olive oil, cover, and allow it to double in size for about 2 hours.
Optionally, you can refrigerate the dough for 3 to 4 days for later use.
