Heat virgin olive oil in a large saucepan over medium heat. finely chop the onion, mince the garlic, and roughly chop the fresh mint leaves.
Add the chopped onions and minced garlic to the saucepan. cook for 7-10 minutes until they become soft and translucent. stir in the fennel seeds.
Add water, chopped mint leaves, and green peas to the saucepan. bring it to a boil.
Reduce the heat to low and let it simmer for 15 minutes. remove from heat and allow it to cool slightly.
