Place the mushrooms in a roasting tin, gill side up. drizzle the olive oil and lemon juice over the mushrooms. bake them in the preheated oven for 15 minutes, then remove from the oven.
In a blender, combine the breadcrumbs, parsley, garlic cloves, and lemon zest. blitz until well combined, creating a green-colored breadcrumb mixture with a texture similar to breadcrumbs.
Spoon the breadcrumb mixture onto each mushroom, pressing it gently into the mushroom cavities.
Drizzle the melted butter over the stuffed mushrooms. return the mushrooms to the oven and bake for an additional 10 minutes until the breadcrumbs turn golden brown.
