To prepare the lemon-coriander flavored moong dal tadka, start by cooking the yellow moong split lentils with 2 and a half cups of water, turmeric powder, and salt until they become soft.
If you prefer a finer texture, you can whisk the cooked lentils, but leaving them with a grainy texture is also an option. let the dal rest in the pan or pressure cooker it was cooked in.
In a small pan, heat a teaspoon of ghee and add cumin seeds. allow the seeds to crackle.
Now, add finely chopped ginger, green chillies, and bay leaf to the ghee and stir fry for a few seconds to release their flavors.
Add this seasoning mixture to the cooked lentils.
