To prepare delhi style mixed fruit chaat, first, boil the potatoes and sweet potatoes until they are cooked and tender. once done, allow them to cool, then peel and dice the boiled potatoes. set them aside.

Cut and peel the apple, banana, and pineapple. dice them into bite-sized pieces. also, remove the seeds from the pomegranate and keep them ready.

In a heavy-bottomed pan or a wok, heat ghee over medium-high heat. add the diced and boiled potatoes to the pan and roast them until they turn golden brown and crispy. once roasted, remove from heat and set them aside.

In a large mixing bowl, combine the roasted potatoes with the cut fruits - apple, banana, pineapple, and pomegranate seeds.

Add chaat masala, cumin powder, red chili powder, finely chopped green chilies, and freshly squeezed lemon juice into the bowl with the mixed fruits and potatoes.
