In a bowl or shallow dish, combine coconut milk, minced garlic, ground cumin, ground coriander, brown sugar, canola oil, salt, paprika, curry powder, and red pepper flakes. add the pork and turn to coat. cover and refrigerate overnight to marinate. drain the pork, discarding the marinade.
For the peanut sauce, in a small saucepan, combine water, peanut butter, minced garlic clove, brown sugar, soy sauce, lemon juice, and red paprika flakes. cook and stir over medium heat until thickened for about 2 minutes. whisk the sauce until well blended and keep it warm.
Preheat the air fryer to 375ÔøΩf (190ÔøΩc). thread the marinated pork onto 12 metal or soaked wooden skewers that will fit in the air fryer. place the skewers in the greased air fryer in batches. cook until the pork is no longer pink, turning occasionally, for about 6-8 minutes per batch.
Serve the pork skewers with the warm peanut sauce and cooked rice, if desired.
