To prepare sun-dried curd chillies, wash the green chillies thoroughly and pat them dry with a cloth until completely moisture-free.
Make a lengthwise slit in the middle of each chilli, stopping halfway through the end. keep the stems intact.
In a large mixing bowl, whisk the curd, water, and salt until well combined.
Gently stir the green chillies into the curd mixture using a clean ladle, ensuring they are well coated. avoid using your hands to prevent irritation from the chillies.
Transfer the curd-coated chillies to a clean bottle and cover it securely. leave the bottle at room temperature on the kitchen counter.
