To prepare the mango tomato bean salsa, start by cooking the red kidney beans (rajma) until they are tender. drain any excess water and let them cool.
Meanwhile, peel and dice the ripe mangoes. chop the ripe tomatoes into small pieces.
Finely chop the green chilli and the fresh mint leaves.
In a mixing bowl, combine the diced mangoes, chopped tomatoes, cooked rajma, green chilli, and fresh mint leaves.
Squeeze fresh lemon juice over the mixture and gently toss all the ingredients together.
