In a large bowl, combine the chickpeas, extra virgin olive oil, dijon mustard, and garlic powder. use a fork or a potato masher to crush the chickpeas, creating a mixture with some mashed chickpeas and some still whole.
Stir in the celery, dill, salt, and pepper, ensuring all ingredients are well combined.
Spread a generous amount of mayonnaise onto one side of each slice of whole grain bread.
Divide the smashed chickpea salad mixture evenly among 4 slices of bread, spreading it on top of the mayonnaise.
Top each sandwich with a leaf of lettuce and a few slices of red onion.
