To begin making thandai nutty kulfi, first prepare the thandai masala by blending almonds, cashew nuts, pistachio nuts, poppy seeds, cardamom powder, fennel seeds, organic cinnamon, and black pepper in a mixer grinder until it forms a smooth paste. keep this thandai masala aside.
In a heavy-bottomed saucepan, heat the milk and bring it to a boil.
Reduce the heat to low and simmer the milk with almost continuous stirring until it reduces to more than half its quantity.
During the initial stages of milk condensation, stir frequently, but as it starts to condense further and reaches less than half its quantity, stir continuously to avoid burning or sticking to the pan.
Once the milk is reduced to more than half, stir in the sugar until it completely dissolves.
