To begin making the exotic sheer khurma delight, heat a tablespoon of ghee in a heavy-bottomed pan. add the chopped dates, golden raisins, and chopped pistachio nuts. saute them for a minute or until the nuts turn lightly golden and the dates become soft. keep them aside.
In the same pan, add the fine vermicelli and roast until it turns golden and fragrant. remove the roasted vermicelli and keep it aside.
In a separate saucepan, heat the milk over medium heat. add saffron strands and cardamom powder. stir the mixture well until the saffron releases its beautiful color and fragrance into the milk.
Once the milk is infused with saffron and cardamom, add jaggery to the milk and stir until it dissolves completely.
Add the roasted vermicelli to the milk and simmer the mixture until the vermicelli is cooked and becomes soft.
