Introducing the exotic mango-coated thai sticky rice. begin by peeling the ripe mango and setting it aside.
Soak the glutinous rice in water for at least 30 minutes. drain the rice and transfer it to a saucepan. add coconut milk, palm sugar (jaggery), and a pinch of salt. bring the mixture to a gentle boil.
Continuously stir the rice mixture to prevent sticking to the bottom of the saucepan.
Allow the rice to cook until most of the liquid is absorbed, giving it a creamy and sticky texture.
Once the rice is almost cooked, turn off the heat and cover the saucepan with a lid. let the residual steam continue to cook the rice further.
