To begin making crunchy diamond-shaped nimki, let's start by making the dough.
In a large bowl, mix together the wheat flour, salt, kali jeeri, and 2 tablespoons of sunflower oil.
Rub the oil into the flour mixture using your hands until it resembles coarse crumbs. this process is called 'mayan' and helps in making the nimkis crunchy and fluffy.
After 5 minutes, add water gradually and knead to form a medium consistency dough, not too soft or hard.
Cover the dough and let it rest for 20 minutes.
