To make crunchy oats munch, heat a skillet over medium heat and dry roast 3/4 cup of rolled oats until they turn golden brown, which will take about 3-5 minutes.
Turn off the heat and transfer the roasted oats to a bowl. allow them to cool.
In the same skillet, dry roast 1 cup of poha (flattened rice) for about 5 minutes. transfer it to the same bowl as the oats and set aside.
Heat extra virgin olive oil in a deep frying pan. add mustard seeds and a pinch of cumin seeds. let the mustard seeds crackle.
Add a handful of peanuts and half-broken red chilies to the pan. fry the peanuts until they turn golden brown.
