Line an 8x8-inch brownie pan with parchment paper and set it aside.
In the bowl of an electric stand mixer fitted with a beater attachment, combine all the ingredients. mix on low speed until everything is fully incorporated. scrape down the sides of the bowl. increase the speed to medium and mix once more until the mixture resembles thick, fudgy cookie dough.
Scoop the mixture into the prepared brownie pan and flatten it out to create an even layer. cover the pan tightly with plastic wrap and refrigerate overnight.
Lift the chilled mixture out of the pan and slice it into 12 bars. if desired, you can drizzle melted white, milk, or dark chocolate over the bars for added sweetness and decoration. individually wrap the protein bars in plastic sandwich baggies for easy storage.
