Stovetop version:

Heat olive oil in a large saucepan. add ginger and garlic, and saute for half a minute. add onions and saute for another half a minute.

Add celery, carrots, cabbage, and green capsicum. cook for 3-4 minutes.

Stir in tomatoes, salt, and vegetable stock. bring to a boil and let it simmer on low heat for about 20 minutes.

Add oregano, basil leaves, red chilli flakes, and pepper. mix well. serve hot, garnished with chopped parsley.
