To prepare tamil nadu style white paniyaram, wash the urad dal and rice flour and soak them in water separately for 2 hours.
Grind the soaked urad dal in a mixer grinder until smooth. add a small amount of water as needed to aid in grinding.
In a mixing bowl, combine the rice flour, ground urad dal paste, sugar, and salt. mix well to form a thick batter.
Allow the batter to rest for an additional hour to enhance fermentation.
Heat oil in a paniyaram pan or a shallow frying pan over medium heat.
