Preheat a non-stick skillet over medium heat and lightly grease it with a small amount of olive oil or cooking spray.
Place the slices of whole grain bread in the skillet and let them toast on one side until they turn golden brown and crispy. flip the slices and toast the other side as well. once toasted, remove the bread slices from the skillet.
In the same skillet, add a bit more olive oil or cooking spray if needed. gently crack the eggs into the skillet, ensuring they remain separate.
Sprinkle a pinch of sea salt and a dash of ground black pepper over the egg yolks for seasoning.
Cover the skillet with a lid and let the eggs cook for a few minutes until the whites are fully set, but the yolks remain slightly runny. if you prefer fully cooked yolks, cook for a bit longer.
