To prepare the spicy soy-glazed eggs, start by boiling the eggs until they are hard-boiled. once cooked, remove the shells and keep them aside.
In a bowl, mix ginger paste, 2 teaspoons of corn flour, 1 teaspoon of soy sauce, and 1/4 teaspoon of black pepper powder to create a smooth paste.
Coat the boiled eggs with this paste evenly and set them aside for a few minutes.
In a pan, heat gingelly oil and add the coated eggs. fry the eggs until they turn golden brown and crisp. remove the eggs from the pan and set them aside.
In the same pan, add ginger, green capsicum, garlic, green chillies, and sliced onions. stir-fry the vegetables until they are tender and slightly caramelized.
