Cook the spaghetti in salted boiling water according to the package instructions until al dente. before draining the pasta, reserve a cup of pasta water.
While the spaghetti is cooking, heat a tablespoon of olive oil in a pan and add button mushrooms and shiitake mushrooms. saute on medium-high heat for a few minutes until they turn golden brown on all sides.
In the same pan, add the remaining olive oil and minced garlic. cook the garlic on low heat for a few minutes until it turns light golden brown. add red pepper flakes, half a teaspoon of salt, and the reserved pasta water. let the sauce cook and reduce until it emulsifies (approximately 2-3 minutes).
Add the cooked spaghetti, saute mushrooms, and parsley to the pan. toss well to ensure the sauce coats the pasta evenly. sprinkle grated parmesan cheese on top.
Serve the mixed mushroom spaghetti aglio olio immediately.
