To begin making the refreshing cucumber ginger mint lemonade, place the chopped cucumber, freshly squeezed lemon juice, raw honey, grated ginger, and water in a blender.
Blend the mixture until the cucumber is completely pureed and the ingredients are well combined.
Strain the cucumber puree through a fine mesh strainer into a pitcher. this will remove any pulp and give the lemonade a smooth texture.
Add a handful of fresh mint leaves to the pitcher, gently muddle them with a muddler or the back of a spoon to release their flavors.
