To make the moringa mint masala vadai, start by washing the chana dal thoroughly and then soaking it in water for 2 to 3 hours.

While the lentils are soaking, wash and prepare the moringa leaves (drumstick leaves), mint leaves, and coriander leaves separately.

After the lentils have soaked, drain the water and transfer them to a blender.

Add ginger, garlic, dried red chillies, cloves, cumin seeds, asafoetida, and a pinch of salt to the blender.

Grind the mixture, adding a little water to form a coarse paste.
