To prepare the malvani spice blend, start by dry roasting the coriander seeds, cumin seeds, fennel seeds, whole black pepper, and poppy seeds in a pan. roast them for about 2 minutes until they release their aroma.
Add the mace (javitri), dried cinnamon, star anise, and stone flower (kalpasi) to the pan. continue to roast the spices for another 3 minutes to enhance their flavors.
Remove the cloves from the ingredients list as they are not needed in this spice blend.
Allow the roasted spices to cool down to room temperature.
Once cooled, transfer the spices to a mixer grinder or spice grinder.
