Soak the rice in water for 6 hours. drain the water and blend the rice in a blender along with grated coconut and sugar until you get a fine paste.
In a separate bowl, take warm water and add dry yeast. mix well until the yeast is dissolved. then, add this yeast mixture to the rice and coconut batter. mix everything together.
Cover the batter and let it ferment overnight. the fermentation process will help the appams to become soft and fluffy.
Heat an appam tawa or a non-stick pan. rub some oil on the surface of the tawa to prevent sticking.
Pour a ladleful of the fermented batter onto the center of the tawa. immediately, lift the tawa and rotate it in a circular motion to spread the batter evenly and form a thin layer at the edges.
