Start by soaking the raisins, dried cherries, cashew nuts, almonds, dried figs, and tutti frutti in rum or the juice of 3 oranges. allow them to soak for at least a day in advance for a deeper flavor.
After soaking, place the soaked dry fruits and the juice of an orange in a saucepan. cook over medium heat until the juice is absorbed. let it cool completely.
Preheat the oven to 180Êû≥c and line a 9-inch cake tin with greaseproof paper.
In a large mixing bowl, sieve together the whole wheat flour, baking powder, baking soda, cinnamon powder, nutmeg powder, cloves, and dry ginger powder.
Add the soaked, cooked mixed fruits to the flour mixture and toss them well to ensure they are coated with flour.
