To prepare the caramel fruit cake, begin by soaking all the dry fruits (such as raisins, apricots, etc.) in rum or fruit juice like apple juice or orange juice. it is best to soak the dry fruits for at least a week for enhanced flavor.

On the day of baking, preheat the oven to 350_f (180_c).

For the caramel syrup, take a heavy-bottomed pan, spread sugar, and cook on low-medium flame. swirl the pan instead of using a spoon to melt the sugar. once the sugar changes color to brown, remove it from the stove and add the same amount of hot water.

Place the pan back on the stove and allow the sugar syrup to dissolve slowly, which may take about 10-15 minutes. let it cool.

Drain the rum or juice from the soaked dry fruits and sprinkle 2/3 tablespoon of flour over them to prevent them from settling at the bottom of the cake pan. save any drained rum to pour over the cake later for added flavor.
