In a food processor, add oats and fresh coconut. process until they are finely ground.
Add the medjool dates to the processor and continue processing until a dough-like consistency is formed. avoid making a paste.
Incorporate salt and 2 teaspoons of matcha green tea powder into the mixture. mix well to combine.
Shape the mixture into balls of desired size. if preferred, roll the balls gently in additional matcha powder to absorb any stickiness (optional).
Place the energy balls in an airtight container and store them in the refrigerator for up to a week.
