Heat ghee in a stockpot over medium flame. add crushed cardamom pod to the pot once the ghee is slightly heated. reduce the heat to low and lightly fry the cardamom for 30 seconds.
Add milk to the pot and bring it to a simmer. crush the saffron strands and add them to a bowl. take two tablespoons of hot milk from the pot and add it to the saffron. set aside and allow the saffron to release its fragrance and color.
Add the saffron milk mixture to the pot of milk. continue to cook the milk on low heat for about 15-20 minutes or until it has reduced by almost half. gently stir to incorporate the cream (malai) that forms on the top back into the milk. repeat this step whenever cream forms. remember to stir and scrape the bottom frequently to prevent scorching.
Once the milk has reduced by almost half, add grated paneer and condensed milk. stir to combine and use a spatula to press the paneer against the walls of the pot to help it break down and melt.
Cook the mixture on low heat until it reaches the desired thickness. this will take about 8-12 minutes for the paneer to dissolve slightly and the milk mixture to thicken.
