To begin making homemade whole wheat pita bread, gather all the ingredients, especially the yeast.
In a large bowl, combine the all-purpose flour, whole wheat flour, salt, and instant dry yeast. mix well.
Gradually add water to the flour mixture and knead the dough until it becomes smooth and elastic. add a little more flour if the dough becomes sticky.
Once the dough forms a ball, add the extra virgin olive oil. transfer the dough to a work surface and knead for about 10 minutes until it becomes well combined.
Place the dough in a large bowl coated with olive oil. cover the bowl with plastic wrap or a damp cloth and allow the dough to rise for approximately 2 hours until it doubles in size.
