To create the crispy lemon ginger artichoke bites, start by preparing the artichoke hearts. squeeze out any excess moisture from them and cut them into bite-sized quarters.
In a mixing bowl, whisk the egg, grated ginger, minced garlic, lemon zest, black pepper, and a pinch of salt until well combined.
In another bowl, combine all-purpose flour, panko bread crumbs, grated parmesan cheese, and a pinch of salt to create the coating mixture.
Dip each artichoke heart quarter into the egg mixture, ensuring it's well coated, and then coat it with the breadcrumb mixture. press the breadcrumbs onto the artichoke to adhere.
Heat sunflower oil in a deep frying pan over medium heat. once hot, carefully place the coated artichoke bites into the oil in batches.
