To prepare the citrus herb quinoa delight, start by washing the quinoa and soaking it in 1.75 cups of water for approximately 10 minutes.
In a pressure cooker, heat a tablespoon of extra virgin olive oil over medium heat. add the minced garlic, star anise, and red chili flakes.
Allow the spices to sizzle and the garlic to turn a light golden brown.
Add the soaked quinoa to the pressure cooker along with the soaking water. season with salt and close the pressure cooker.
Pressure cook the quinoa for about 4-5 whistles and then turn off the heat.
