Emulsifier (INS 332) is a potassium salt of citric acid in the form of white, odorless crystalline powder. It can be commercially produced by fermentation of carbohydrate solutions with Aspergillus niger. It is used as a food additive to regulate the acidity or alkalinity of a food.
