To prepare the coffee-infused apricot muesli bars, start by whisking together the low-fat curd, egg whites, and vanilla extract until they are well combined.
Gradually add the instant coffee powder, muesli, finger millet (ragi) flour, dried apricots, and extra virgin olive oil to the mixture. stir and combine all the ingredients thoroughly until you have a uniform batter.
