Prepare rice paste: begin by washing and soaking the rice overnight. the next day, drain the excess water from the rice. place the drained rice in a blender or mixer jar and blend it into a fine paste.
Sweeten the dough: transfer the rice paste to a mixing bowl. add coconut sugar, clarified butter (ghee), rice flour, ground cardamom powder, and coconut milk. gradually mix in about 2 tablespoons of coconut milk to create a thick batter. ensure that the sugar completely dissolves in the batter.
Heat coconut oil: heat coconut oil in a wide, heavy-bottomed pan or skillet over medium-high heat. make sure there's enough oil for deep frying the donut rings.
Fry the donut rings: using a ladle, pour the batter into the hot oil in a circular shape to form rings. reduce the heat to medium and allow them to cook on one side until they turn light golden brown.
Flip and cook: carefully flip the donut rings using a pair of tongs and continue frying until they achieve a uniform golden brown color on both sides.
