To begin making the nutty honey baklava, first, prepare the filling by coarsely chopping the walnuts and pistachio nuts in a food processor to form a coarse powder.
Set aside 4 tablespoons of the chopped nuts for decoration and place the remainder in a bowl.
Combine the nuts with 1/3 cup of sugar, cinnamon, and cloves. mix well to create the filling.
Preheat the oven to 170ÔøΩc and lay a damp dish towel on a work surface.
Thaw the phyllo dough according to the manufacturer's instructions and unroll the sheets on the damp dish towel, covering them with another damp dish towel to prevent drying.
