Begin by preparing the tindora royale. wash the tindora (ivy gourd) thoroughly and cut them lengthwise into thin slices.
In a mixing bowl, combine the chickpea flour (besan), water, salt, turmeric powder (haldi), red chilli powder, and a pinch of baking soda. mix well to create a smooth batter.
Heat cooking oil in a pan over medium heat for frying.
Dip the tindora slices into the besan batter, ensuring they are coated evenly.
Once the oil is hot, carefully drop the coated tindora slices into the oil and fry them until they turn golden brown and crispy.
