To make the baingan tomato masala, start by cooking the brinjal separately.
Cut the brinjal into wedges and heat a pan with a teaspoon of oil. add the brinjal wedges and sprinkle some salt. stir to combine the salt evenly.
Cover the pan and cook the brinjal on low to medium heat until it's partially cooked.
After covering the pan, the trapped steam will help the brinjal cook without adding water.
Once the brinjal is partially cooked, uncover the pan and continue roasting until it's fully cooked.
